Red curry Paste

Ingredients: 10-12 Red Dry chillies de seeded

1 tablespoon chopped Galangal

1 tablespoon lemon grass chopped

1 teaspoon kaffir leaves or lime zest

1 tablespoon chopped garlic

2 shallots chopped

sea salt 1 tablespoon

Soak the dry chillies in warm water for 20-25 minutes

In a mortar pestle grind the soaked red chillies and then add garlic and lemon grass keep using the pestle to smooth it and keep adding rest of the ingredients and keep grinding till it turns into a smooth paste. You can use the food processor too.
