Mediterranean egg dish that existed for cultures. Over easy or poached eggs cooked in a sauce of tomatoes, onions, peppers and garlic.


ree

4 tablespoons avocado oil

1 small chopped red onion

4-5 chopped tomatoes

1 teaspoon tomato paste with 2-3 tablespoons of water

3 cloves minced garlic

1 small chopped red bell pepper

1 small green pepper

1 jalapenos diced

cilantro and basil for garnish

Salt to taste

1/2 teaspoon cumin powder

1/4th teaspoon red chilli powder

Saute onions in a non stick pan with oil , then add garlic and salt wait till its golden brown and add the peppers and dries spiced then add tomatoes cook till you see the oil and then make place for the eggs and cover the pan for 4-5 minutes till the yellow is cooked and garnish with basil and cilantro.
